Dark Chocolate Pumpkin Truffles (GF)

Dark Chocolate Pumpkin Truffles (GF)

Ingredients:

1/2 cup pumpkin puree
1/2 cup creamy peanut butter
10 Medjool dates (pit removed)
2 tbsp coconut oil
3/4 cup almond flour
2 tsp vanilla extract
1 tsp pumpkin pie spice

Topping:
Dark chocolate chips or bar
Cacao powder
Sea Salt

Directions:

Prepare a cookie sheet lined with parchment paper and set aside. Add the peanut butter and dates to a food processor and blend until the dates are broken down into tiny pieces. Add the remaining ingredients for the truffles to the food processor and process until everything is well combined. Taste and adjust the spices to your preference. Put in the fridge for 10 minutes to get more firm.

Flour your fingertips with almond flour and take out a spoonful of the truffle mixture at a time and roll into a ball shape between the palms of your hands. Place the truffles onto the prepared cookie sheet. Transfer the cookie sheet to the freezer for approximately 10 minutes, or until they firm up.

Melt the dark chocolate in the microwave in a bowl and dip each truffle in the melted dark chocolate, covering entirely. Place on the baking sheet. Dust with cacao powder and sea salt. Leave in the refrigerator until ready to serve!
