Chicken under a Brick with Chimmichurri Sauce

Chicken Marinade Ingredients:

1 tbsp fresh lemon juice

1 tbsp kosher salt 

1 tsp dried oregano

Fresh thyme sprigs, chopped

Minced Garlic

1/4 cup extra-virgin olive oil

1 Whole spatchcocked organic chicken

*Alternatively, Trader Joe’s Lemon Spatchcocked Chicken comes marinated and ready to put on the grill!

Marinade Directions:

Rub the chicken with the marinade, cover and refrigerate for as long as possible. Bring to room temperature before grilling.

Chimichurri Ingredients:

1/4 cup extra-virgin olive oil

1/4 cup chopped parsley 

1 tbsp chopped cilantro 

1 tbsp fresh lemon juice

1 large garlic clove minced

A sprinkle of dried oregano & kosher salt

Directions: Oil your grill to prevent the chicken from sticking, Avocado Oil or Grill Spray should do the trick before the grill is hot. Light your grill to moderate heat. Cover 2 bricks with foil. Grill the chicken breast sides down, pressed with the bricks, over moderate heat until browned, 15 minutes. Flip and grill over low heat. Cook the chicken until the internal temperature reaches 165 degrees (use a meat thermometer) and juices run clear when a thigh is pierced, about 35 minutes total. Transfer the chicken to a carving board to rest for 10 minutes. Carve and serve with the Chimichurri. Enjoy!
