Healthy Vodka Sauce, Gluten & Dairy -Free

Ingredients:

+ 1 tablespoon extra virgin olive oil

+ 1 medium white onion, chopped

+ 3 cloves of garlic, minced

+ 1 cup vodka (not flavored!)

+ 1/2 Jar Monte Bene, Michael's or Rao's Tomato Basil Sauce (clean ingredients!!)

+ 1 cup Unsweetened Plain Almond Milk

+ 1 teaspoon salt

+ 1/4 teaspoon pepper

+ Chickpea Pasta (I used @eatbanza)

+ Freshly Grated Parmesan Cheese

Directions:

Heat up 1 tablespoon of olive oil in a large sauté pan over medium heat. After a minute or so, add the onions and garlic and cook until onions are translucent. Then add in the vodka and simmer uncovered for 5-7 minutes. Next, add the tomato sauce, almond milk, salt and pepper to the sauce and allow to simmer for 10 minutes. Serve over Chickpea Pasta and add some Freshly Grated Parmesan Cheese on top. Enjoy!
