Clean Chicken Salad Recipe (GF)

My favorite way to use up leftover chicken 😋 Most store bought / deli-made chicken salad is made with mayonnaise containing canola oil, which is processed and inflammatory! This recipe uses Avocado Oil Mayo (made with Organic Eggs and clean, pronounceable ingredients) and Homemade Pesto so it’s healthy, clean and DeLiCiOuS!

Ingredients:⠀

1/8 Red Onion, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 tbsp Avocado Oil Mayo ( Primal Kitchen is the cleanest)⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp Pesto (we make our own using pine nuts, basil, garlic, olive oil & parmesan cheese, but Gotham Greens has a clean one)⠀⠀⠀⠀⠀⠀⠀⠀⠀
Handful of walnuts, finely chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
Handful of cut Grapes, finely chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp Dijon Mustard ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Leftover 1/2 Roasted Chicken, cut into small pieces Sea Salt to taste⠀⠀⠀⠀⠀⠀⠀
Optional- Diced Celery stalk

Directions:⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cut leftover Cooked Chicken into small pieces. Combine in a bowl with the red onion, pesto, walnuts, grapes, dijon mustard and avocado oil mayo. Mix well. Then serve over a bed of greens with your favorite veggies or Whole Grain Bread! I like making mine into a BLT Salad 🥓🥬🍅🥗
