Chickpea Crumb & Parmesan Crusted Salmon

Serves 1 ( increase per fillet as needed)

Ingredients:

1 tbsp Chickpea Crumbs (can also use panko or breadcrumbs)

1 tbsp Grated Parmesan

2 sprigs Rosemary finely chopped

Sea Salt

6 oz Salmon portion ( I prefer the taste of Farmed Salmon but only buy from Whole Foods and trusted fish markets, feel free to use whatever kind you prefer)

Vegetables of your choosing- Carrots, Asparagus, Potatoes- anything works!

Directions: Preheat the oven to 380 degrees. Spray a baking sheet with olive oil spray and place salmon skin side down. Mix the chickpea crumbs, parmesan, rosemary and sea salt together and then apply to the top of the salmon. Toss washed vegetables in olive oil, salt and rosemary. Add to baking sheet. Bake in the oven for 18 minutes, flip the vegetables and then switch the oven to Hi Broil for about 7 minutes or until top of salmon becomes crispy!
